Bajra | Pear Millet and Jowar | White Millet are gluten free and have many nutritional values. We tend to consume a mix of many whole grains, cereals and pulses in our diet and Bajra - Jowar forms a regular constituent.
Today Amma tried a mix of Bajra, Jowar and Whole Wheat with an additional flavouring of fresh Methi | Fenugreek and fresh Dhania | Coriander. This tastes very delicious and is super nutritious. Paired with a Dal, any Side Dish and a bit of Gur | Jagerry, this is simply divine.
INGREDIENTS
1 1/2 cup Bajra | Pear Millet Flour
1 1/2 cup Jowar | White Millet Flour
1/2 cup Whole Wheat Flour
3/4 cup Fresh Methi | Fenugreek Leaves, thoroughly washed, drained and chopped
1 tblsp Fresh Dhania | Coriander Leaves, finely chopped
1 tsp Adrak | Ginger, finely chopped
1 tsp Green Chilli, finely chopped
1 tsp Ajwain | Carom Seeds
1/2 tsp Salt | To taste
1 tsp Oil
2 tblsp Homemade Ghee | Clarified Butter
Whole Wheat Flour, for dusting

METHOD
- In a mixing bowl, add all the ingredients except oil and ghee. Mix well.
- Add sufficient water to bind a stiff dough and rest it for 3 minutes. After 3 minutes, the dough will become soft.
- Add oil and knead dough again and make big lemon size equal portions.
- Dust one portion in the whole wheat flour and roll to make a 5" diameter roti. As you roll the roti, the edges might break. But that is how this roti will be!
- Place a non stick tava on flame, and when tava is hot, reduce flame to medium.
- Transfer rolled roti to the tava.
- Cook till golden brown spots appear on one side and then flip and cook the other side for few seconds.
- Remove roti from the tava and cook both sided directly on the flame till golden brown spots appear all over the roti.
- Remove from flame and place in hot pack. Smear ghee on both sides.. Make the remaining rotis in similar manner.
- Serve hot with any Side Dish and a Dal.
